🍉 Grilled watermelon and feta cheese salad 🍉

Ingredients: 

  • 1 small watermelon (4 lb)
  • 1 lemon
  • 1 chioggia (candy cane) beet
  • 10 1/2 oz feta cheese
  • 2 cups / 80 g of arugula
  • 4 tbsp fresh dill
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • 1/2 tsp chili flakes

Instructions:

  1. Cut the melon in half, and then cut it into thick slices.
  2. Cut the lemon in half.
  3. Using a grill pan or grill, grill the lemon halves and the watermelon slices on high heat for 1-2 minutes on each side.
  4. Crumble the feta cheese with a fork in a bowl.
  5. Peel the beet and either cut it into thin slices or spiralize it with a spiralizer.
  6. Add the watermelon slices to a service platter and top it off with arugula, beet, dill, and crumbled feta cheese.
  7. Squeeze the lemon juice on top of the salad, and add olive oil, salt, and chili flakes.

🥗 BBQ tofu with bean salad 🥗

Ingredients:

  • 19 oz firm tofu
  • ½ cup smoky barbecue sauce
  • 14 oz mixed cooked beans
  • 5 oz of haricots verts or green beans
  • 1 red onion
  • 9 oz cherry tomatoes
  • 3 tbsp fresh oregano
  • 3 tbsp olive oil
  • 1 lemon, juice and zest
  • 1 tsp chili flakes
  • 1 ½ tsp sea salt

Instructions:

  1. Cut the tofu into slices and marinate in the barbecue sauce.
  2. Drain the beans and rinse them in water.
  3. Boil the haricots verts for 2 minutes, drain, and rinse in cold water.
  4. Thinly slice the red onion into and cut the tomatoes in half.
  5. Mix the onion, tomatoes, haricots verts, beans, oregano, olive oil, lemon zest, lemon juice, chili flakes, and salt.
  6. Grill the tofu on the grill or a grill pan until browned. Serve the tofu with the salad and enjoy!

🍢 Chicken skewers and coleslaw 🍢

Ingredients: 

  • 1 3/4 lb chicken fillet
  • 4 red bell peppers
  • 4 large carrots
  • 14 oz red cabbage
  • 8 tbsp paleo mayonnaise
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 cup chopped parsley
  • 1 tsp sea salt

Instructions: 

  1. Cut the chicken into cubes and the red pepper into squares, season with cumin, paprika and sea salt.
  2. Stack the cut pieces on skewers.
  3. Cook the skewers on the grill or in a grill pan on high heat until fully cooked.
  4. Shred the carrots and the cabbage, combine with mayo and parsley.
